Crème de marrons de l'Ardèche is sweet chestnut purée from the Ardèche region, invented by company founder Clément Faugier. What started out as a family business with a dozen employees has grown into one of France's most respected food brands with exports to over 80 countries. Trying to find a way to recycle the “debris” from these sweets, Faugier created his own recipe for crème de marrons. The factory has been churning out the stuff ever since and it has become a popular food, eaten with yogurt, ice cream and many other sweets throughout France Crème de marrons is made from 100 percent natural ingredients: chestnuts, vanilla, sugar and water. A very common snack all over France: A crepe filled with creme de marrons (sometimes with some chocolate sauce and/or whipped cream). A staple in any cold weather and in ski resorts too.

Pork Rillettes are the ones the French actually eat, as opposed to the higher end and far more expensive Goose ones often seen in gourmet shops. Pork rillettes are a pantry staple and found in restaurant menus, in kitchens and everywhere. The lid of the can (127 gram or 4.5 oz) can be closed to guarantee freshness after opening. Rillettes is a preparation of meat similar to pâté. Originally made with pork, the meat is cubed or chopped, salted heavily and cooked slowly in fat until it is tender enough to be easily shredded, and then cooled with enough of the fat to form a paste. They are normally used as spread on bread or toast and served at room temperature. The soft, smooth texture is a deciding factor in determining a good rillette dish. Like cassoulet or fondue, this French dish has its many regional definitions. In general most rillettes are served at room temperature, as a spread with toast points, much like a paté.

We did however find a French company that makes Orange and Rose flower syrup, Noirot (a division of Antesite, well known for their anise-flavored drinks). Orange flower water (aka orange blossom water) is a clear, perfumed distillation of fresh bitter-orange blossoms. The Espelette pepper (French: Piment d'Espelette; Basque: Ezpeletako biperra) is a variety of pepper that is cultivated in the French commune of Espelette, Pyrénées-Atlantiques, traditionally the northern territory of the Basque people. In 2000, it was classified as a AOC product and was confirmed as a AOC (Appellation d'Origine Controlee, meaning the name is protected) product on 22 August 2002. The plant, originally from Mexico and to a lesser extent South America, was introduced in France from the New World around the 16th century. After first being used medicinally, it has since become popular for preparing condiments and for the conservation of meat and ham. It is now a cornerstone of Basque cuisine, where it has gradually replaced black pepper and it is a key ingredient in piperade. AOC espelette peppers are cultivated in the following communes: Ainhoa, Cambo-les-Bains, Espelette, Halsou, Itxassou, Jatxou, Larressore, Saint-Pée-sur-Nivelle, Souraïde, and Ustaritz. It is harvested in late summer and, in September, characteristic festoons of pepper are hung on balconies and house walls throughout the communes to dry out. An annual pepper festival, attracting some 20,000 tourists, is held in October.
